    Laphroaig Triple Wood, this expression of their famous whisky, from the remote island of Islay in the Western Isles of Scotland, has enjoyed a triple maturation in 3 types of cask. Just as with their standard Quarter Cask expression, the first maturation is in American oak, ex-Bourbon Barrels. They then select the most suitable of these barrels, containing a range of different aged spirit and transfer into small 19th Century style Quarter Casks for a second maturation. The final maturation is in specially selected, large European oak, Oloroso Sherry Casks.

    This triple cask maturation results in what they think is the perfect marriage of peat, oak, and sherry notes, retaining the traditional Laphroaig peat smoke aroma, balanced by the subtle sherry sweetness and hints of sea salt. Laohroaig triple wood is finally bottled non- chill filtered, at ABV 48% for maximum flavor.

    Please note since Laphroaig Triple Wood is non - chill filtered it may go cloudy when water is added in the glass, this is perfectly normal for a non – chill filtered whisky.

    The Spey Valley, in which the BenRiach Distillery was built by John Duff in 1898, is home to many of Scotland's great whiskies, but BenRiach has its own uniqueness borne from the particular methods and skills of the men who craft the whisky, the ingredients they use, the distinctive copper stills and the high quality barrels selected for maturation. BenRiach boasts one further difference - standing apart from the other Spey Valley distilleries, the traditional floor maltings with their distinctive pagoda style chimneys can produce peated, malted barley, enabling the distillery to capture the defining taste of peat reek in a few of their special bottlings. A recent Benriach 16yo that has dispensed with the Latin naming system, this has been finished in Sauternes. The standard issue 16yo is a terrific dram, so this should be very interesting. Matured in the traditional style in American bourbon barrels, the whisky is then ‘finished’, for approximately 30 months, in Chateau d’Yquem Premier Cru Superior Sauternes wine barrels, sourced from the Bordeaux region of France. During this second period of maturation the whisky interacts with the oak wood and derives a number of additional flavors and aromas specific to the Sauternes barrel.

    Ardmore’s Traditional Cask is a peated Highlander made up from a vatting of 6 – 13 year old bourbon cask-matured malts which are then finished in the smaller casks for at least a year. It’s not a distillery you hear much about, Ardmore, but it’s actually one of the largest distilleries in Scotland, producing more than 3 million liters of spirit a year, most of it somewhat peated and most of it for use in the popular Teacher’s Highland Cream blend. In fact, the distillery was built by the son of William Teacher in 1898 specifically to support their classic blend.     The bottle comes in a nice box, and is an interesting shape. It has a plastic pouring thing in the top that’s usually used in bars to help stop air getting back into the bottle if the lid is left off. It’s a bit of a pain in the arse, but you soon get used to it.

    Situated along the rolling hills of the Woods of Knock more in the Speyside region of Scotland, Auchroisk Distillery was founded in 1973, its name, which is pronounced "orth-rusk," means "the ford across the red stream” and refers to the well from which the distillery sources its water.

    Auchroisk 20 Year Old Limited Edition Single Malt Scotch Whisky is made from plump, ripe Scottish barley, which is sourced from local farms. Once the barley has been harvested, it is mashed and fermented with water sourced from Dorie's Well. The water, which travels through granite bedrock and then passes through sandstone before reaching the surface of the well, is so soft and clear that whisky expert Jim Murray called it "undeniably sweet” and "an exceptional water source." Following fermentation, the wash is distilled twice, first through Auchroisk's copper-pot wash still and again through its copper-pot spirit stills. The stills, which are equipped with incredibly high necks and nearly horizontal lyne arms, result in a whisky that is flavorful, yet light and elegant.
